Equipment

  • 1 Medium Saucepan For cooking the sugar
  • 1 Whisk To mix the sauce fast
  • 1 Glass jar To store the caramel

Ingredients
  

  • 1 cup Granulated Sugar The sweet base of the sauce
  • 1/4 cup Water Helps melt the sugar
  • 1/2 cup Heavy Cream Must be warm before adding
  • 4 tbsp Unsalted Butter Cut into small pieces
  • 2 tbsp White Miso Paste Adds the salty flavor

Instructions
 

  • Put the granulated sugar and water into a medium saucepan over medium heat.
  • Let it boil without stirring until the sugar turns a dark copper brown color.
  • Take the hot pan off the stove very carefully.
  • Slowly pour the warm heavy cream into the pan while whisking very fast.
  • Add the small butter pieces and whisk until they completely melt.
  • Stir in the white miso paste until the sticky sauce is perfectly smooth.
  • Pour the warm sauce into a glass jar and let it cool down before eating.
