1 Large Skillet For cooking the chicken and the sauce
1 Whisk To mix the sauce together
1 Tongs To flip the chicken breasts
Ingredients
2wholeChicken BreastsBoneless and skinless
1tbspOlive OilFor cooking the chicken
1/2cupBlack Currant JamThe sweet base of the sauce
1/2cupChicken BrothTo thin out the jam
1tbspDijon MustardAdds a little tangy bite
1tbspButterMakes the sauce smooth and shiny
1pinchSaltTo taste
1pinchBlack PepperTo taste
Instructions
Put the olive oil in a large skillet and turn the heat to medium.
Add the chicken breasts to the pan and cook for 6 minutes on each side until fully cooked inside.
Take the chicken out of the pan and put it on a clean plate.
Keep the pan on the stove and add the black currant jam, chicken broth, and Dijon mustard.
Whisk everything together in the pan until it starts to bubble.
Let the sweet sauce cook for 3 minutes so it gets thick and sticky.
Turn off the heat and stir the butter, salt, and black pepper into the hot sauce.
Put the chicken breasts back in the pan and cover them with the warm sweet sauce.
Serve warm right out of the pan.
