This Black Currant Sauce for Chicken is a sweet and tangy topping for your dinner. We cook sweet black currant jam with a little broth and mustard to make a yummy glaze over pan-fried chicken. Equipment

  • 1 Large Skillet For cooking the chicken and the sauce
  • 1 Whisk To mix the sauce together
  • 1 Tongs To flip the chicken breasts

Ingredients
  

  • 2 whole Chicken Breasts Boneless and skinless
  • 1 tbsp Olive Oil For cooking the chicken
  • 1/2 cup Black Currant Jam The sweet base of the sauce
  • 1/2 cup Chicken Broth To thin out the jam
  • 1 tbsp Dijon Mustard Adds a little tangy bite
  • 1 tbsp Butter Makes the sauce smooth and shiny
  • 1 pinch Salt To taste
  • 1 pinch Black Pepper To taste

Instructions
 

  • Put the olive oil in a large skillet and turn the heat to medium.
  • Add the chicken breasts to the pan and cook for 6 minutes on each side until fully cooked inside.
  • Take the chicken out of the pan and put it on a clean plate.
  • Keep the pan on the stove and add the black currant jam, chicken broth, and Dijon mustard.
  • Whisk everything together in the pan until it starts to bubble.
  • Let the sweet sauce cook for 3 minutes so it gets thick and sticky.
  • Turn off the heat and stir the butter, salt, and black pepper into the hot sauce.
  • Put the chicken breasts back in the pan and cover them with the warm sweet sauce.
  • Serve warm right out of the pan.
