Spread a layer of cranberry sauce directly over the cream cheese.
Layer the turkey slices in the center of the tortilla, followed by the Swiss cheese slices.
Top with a handful of fresh spinach. Season lightly with a pinch of salt and pepper.
Tightly roll the tortilla from one end to the other, keeping the filling snug inside.

If you want to make these ahead for a party, wrap the uncut logs tightly in plastic wrap and refrigerate for at least an hour. This helps them firm up so you can slice perfectly round pinwheels!
