Fluffy vanilla cupcakes topped with creamy buttercream and decorated with marshmallows and candy to look like adorable snowmen. A fun and easy holiday project for kids!
Prep Oven: Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
Mix Dry: In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
Cream Butter: In a large bowl, beat softened butter and sugar until pale and fluffy (about 3 minutes).
Add Wet: Beat in eggs one at a time, then add vanilla. Mix in the sour cream.
Combine: Gradually add the flour mixture to the wet ingredients. Mix just until combined. Do not overmix.
Bake: Divide batter evenly among liners. Bake for 18-20 minutes or until a toothpick comes out clean. Cool completely.
Frost: Spread a generous swirl of white buttercream on top of each cooled cupcake.
Decorate: Place a marshmallow in the center of the frosting. Press mini chocolate chips into the marshmallow for eyes and buttons. Use an orange sprinkle for the nose. Add pretzel sticks for arms if desired.
Notes
If the marshmallow heads slide around, use a dab of frosting on the bottom of the marshmallow to "glue" it to the frosted cupcake base.
