6-7medium apples (about 3 lbs)a mix of tart and sweet, cored and sliced
1tbsplemon juice
1/4cupgranulated sugar
1tbspall-purpose flour
1tspground cinnamon
For the Crunchy Topping:
1cupall-purpose flour
1cupold-fashioned rolled oats
1cuppacked light brown sugar
1/2cupground cinnamon
1/2tspsalt
1/2cup(1 stick) cold unsalted buttercut into small cubes
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
In the baking dish, combine the sliced apples, lemon juice, granulated sugar, 1 tbsp of flour, and 1 tsp of cinnamon. Toss gently to coat evenly and spread the apples in a single layer.
In a separate bowl, whisk together the 1 cup of flour, rolled oats, brown sugar, 1/2 tsp of cinnamon, and salt.
Add the cold, cubed butter to the dry ingredients. Use your fingertips or a pastry cutter to work the butter into the mixture until it forms coarse crumbs with some pea-sized butter chunks remaining.
Sprinkle the topping mixture evenly over the apples.
Bake for 40-50 minutes, or until the topping is deep golden brown and the fruit filling is hot and bubbly.
Let it cool on a wire rack for at least 15 minutes before serving to allow the filling to set.

Notes
For the best flavor and texture, use a mix of apples like Granny Smith and Honeycrisp. Letting the crunch rest before serving is the key to a perfectly set filling that's easy to scoop. Serve warm with a scoop of vanilla ice cream for the ultimate treat!
