  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 tbsp olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 1 tsp dried thyme
  • 1 tsp Dijon mustard
  • Salt and black pepper, to taste
  • Fresh parsley (optional, for garnish)

Method
 

Directions
    Cook the chicken
    1. Heat olive oil over medium heat in a large skillet. Add chicken and season with salt and pepper. Cook until browned on all sides and cooked through. Remove chicken and set aside.
    Sauté the vegetables
    1. Add onion to the skillet and cook until softened, about 3 minutes. Stir in the garlic and cook for another minute.
    Assemble the sauce
    1. Return the chicken to the skillet. Add sour cream, chicken broth, thyme, and Dijon mustard. Stir and bring to a simmer.
    Thicken the sauce
    1. Reduce heat to low and cook for a further 5 minutes, or until the sauce has thickened slightly. Season with additional salt and pepper, as needed.
    Serve and enjoy
    1. Serve hot over cooked pasta, rice, or mashed potatoes. Garnish with fresh parsley, if desired.
